We need a special place for the ‘icons’. They are venerated examples of how to be; a benchmark for how to strive to reach such levels of glory. There are icons in every industry, standing pretty on their pedestals, a near god-like effigy.

Unsurprisingly, the wine industry is full of icons.

Icona is the story of the classic South Australian Cabernet Sauvignon, often overlooked in the popularity contest for the overtly fruit-rich Shiraz. Rich beyond anything that can be achieved in the European climates, Icona celebrates Mclaren Vale Cabernet Sauvignon in all it’s glory: dense tannin structure, the ability to outlive the family cat and luscious fruit and spice. However the addition of 20% cooler climate Adelaide Hills Cabernet Sauvignon subtly adds the true essence of Sauvignon: dark cherries, blueberries, methoxypyrazines (that pepper flavour compound).



2016 was a lovely harvest to work with and the window for picking Cabernet Sauvignon in Mclaren Vale was wider and more open than usual. Full ripeness was easily achieved without reaching the territory of over-ripeness. French oak was used to aid in savoury spice development and support the beautiful tannins across a long maturation in barriques, which allowed the wine to soften gently until it was time to lock it down in bottle. These vineyards of 15-to-20-year-old vines in Willunga, McLaren Vale and Kuitpo, Adelaide Hills produce stunning fruit that is so easy to work with – no matter what style of wine is produced.

The results really speak for themselves – approachable and expressive Cabernet Sauvignon. Just like the icons that came before it.
