Zaptung comes from the Murray Darling, where the soil is red sand-loam over limestone. It is machine picked early, oxidatively handled, destemmed with a light pressing cycle, before being inoculated with a neutral yeast and fermented until dry. It is then matured for six months in tank with weekly lees stirring. Enjoy by the glass, bottle or litre.
