2015 Cabernet Sauvignon

We need a special place for the ‘icons’. They are venerated examples of how to be; a benchmark for how to strive to reach such levels of glory. There are icons in every industry, standing pretty on their pedestals, a near god-like effigy.
Unsurprisingly, the wine industry is full of icons.
Icona is our homage to the icons of McLaren Vale, of which there are many. For this iteration we celebrate the 2015 Cabernet Sauvignon – big, bold, juicy – with cassis and blueberries on the nose and molasses, chocolate and cherries on the tongue. Pair with a thick, juicy steak, or after dinner yarns.
This Cabernet Sauvignon comes from a vineyard in the Sellick’s Beach / Willunga Foothills region, a vineyard familiar to many of AB&D blends. Traditionally, being the trailblazers we are, we would add Cabernet Sauvignon to some of our more wild alternative varietals to help give the wine ‘curves’, adding a desired level of texture, weight and richness. However, this time we decided to champion Cabernet Sauvignon on its own, pulling it out of the Best Supporting Actor category and into the limelight. To help it along the way, we destemmed, crushed and left for two weeks on skin, before letting it sit back and enjoy 24 months in barriques – one third new oak and the rest seasoned.
The result is classic, approachable and expressive Cabernet Sauvignon. Just like the icons that came before it.
