Ö - Bonoposto Vineyard 2021 GRÜNER VELTLINER

NOSE: White nectarine, flint, white pepper and brioche.

PALATE: Racy acidity creates a precise driving line with stone fruits and chalky texture fleshing out the palate around that acid backbone.

PAIR: Oysters, whole roasted fish, roasted cauliflower.

CELLAR: Up to 15 years.

The Adelaide Hills is fast becoming synonymous with producing high quality Gruner Veltliner. We've taken this one step further and focused on two individual vineyard expressions of this sophisticated variety. Situated at an altitude of around 500m, the longer and cooler ripening window encourages a gentle development of flavour, more subtle and nuanced with a tight acid and mineral edge. Fermentation in old oak builds texture and fleshes out the mineral components.
