Junior 2022 Nebbiolo

NOSE: Creaming soda, rose petals, red currants and sandalwood.

PALATE: Succulent cherry fruits slide on a dynamic wave of tart acidity, lapping on the shores of sandy tannins that build into a playful castle of structure.

PLATE: Veal or porcini and sage pasta.

CELLAR: 15 years

Fleet-footed, full-throttle; JUNIOR plays the room with vibrant ruby fruit and repartee at the ready. Sour cherry pie stolen from the window sill, this approachable, easy-drinking red is a must-try offering bound to leave its mark. 

Tight acid rounded by dusty tannin gives this Nebbiolo a chewiness not always present in other showings of the varietal, with a nose boasting rhubarb, cassia and raspberry licorice. Taut and structured, JUNIOR paves his own way. Stubborn? Maybe. But like his namesake uncle, he gets results.

Corrugated Castle 2021 Chardonnay

NOSE: White flowers, flint, white stonefruit, golden apples.

PALATE: Bright and zesty upfront with grassier elements that resolve into a creamy, pillowy soft leesy finish slathered over the thick brioche.

PAIR: Crayfish, snapper or roasted cauliflower.

CELLAR: Up to 10 years.

This is the style of Chardonnay that really gets me going! Tart acidity like biting into a fistful of soursobs, plush white stonefruits and a whiff of flinty reduction all held together with a lick of oak and a golden leesy texture. Wild yeast, partial MLF, fermented in 40% new French oak puncheons; again another wine of detailed winemaking yet still showing the pedigree of this Chardonnay vineyard. From a high elevation vineyard that is just amazing for Chardonnay, and the grower is meticulous in his management of the vines. It's generous yet driven, proud yet subtle - just the way Chardonnay should be.

Pâté 2022 Trousseau

NOSE: Confectionary, potpourri and spiced earth.

PALATE: Soft with an elegant vibrancy, the palate unwinds to reveal dusty structure and confectionary aromatic fruits and an intruiging earthy note.

PAIR: Pâté, cured meats and pickled things.

CELLAR: Up to 10 years.

Trousseau is here! The Portuguese called this grape variety Bastardo (no further translation necessary) due to its notoriety in the vineyard, yet as a wine it's a wonderfully rustic variety. This might look like a soft little Rosé but there's a depth here that belies its lighter hue - wild cherries mixed with an ethereal earthiness all bound together by a solid textural core - translated from winespeak this reads as 'it's yummy AND interesting'. Served slightly chilled for the best effect, it's one of the most exciting wines from a very exciting vintage; it's true AB&D in a glass.

X-008 2022 Carignan

NOSE: Pink flowers, red berries and a slight hint of jamon.

PALATE: Light and delicate yet backed with a chalky structure that safely houses the perfumed fruits.

PAIR: Jamon, grilled sardines or a heirloom tomato salad.

CELLAR: Up to 10 years.

Carignan is a lovely and unique variety. Most often used in blends to add colour, structure or acidity, it also stands beautifully on it's own, using it's rustic charm to seduce and enlighten. This is my favourite Carignan we've made, using less whole bunch than we have in the past which allows for the earthy fruits to be expressed with that slight herbal note adding a complexing element without being the dominating character. I'm not sure what it is about Carignan that I find so alluring, but every year it's a wine I just love to make.

Corrugated Castle 2021 Pinot Noir

NOSE: Bright sour cherries, dark berries and exotic spices in a mortar and pestle, with fresh summer rain squeezed out of the dirt from a forest floor.

PALATE: Ethereal and satin smooth, velvety tannins are supported by the energetic acidity that draws out the palate far into the future.

PAIR: Crispy skin duck breast or a rare cheeseburger, miso eggplant.

CELLAR: Up to 15 years.

Whisson Lake is a magical vineyard that's planted solely to Pinot Noir and at over 600m, it has one of the highest elevations of any vineyard in the Adelaide Hills which shows through in the wonderfully elegant perfumed aromas. For the Pinot nerds amongst you, the clones are a big ol' mix: D5V12, MV6, 114, 115; with the ferments layered with 30% whole bunches, 30% footstomped for over and hour and topped with the remainder as whole berry component. On skins for 4 weeks and gently basket pressed to old oak for a year, with nearly another year of bottle age on it. It's this level of detail and finesse from both the vineyard and winemaking processes that make this such a unique and special wine.

Very Special 2022 Riesling

NOSE: White flowers, citrus zest and crabapples.

PALATE: It bursts with generous flavour immediately that tightens towards a linear finish, with structure and acidity intertwined in a sweet, harmonious embrace.

PAIR: Choo Chee prawn curry and fish n chips.

CELLAR: Up to 15 years.

The Very Special Riesling celebrates a wine that united Australians in communal consumption. The classic Moselle, an Aussie take on the traditional German Rieslings, was a wine that was enjoyed by all Australians due to its refreshing nature throughout much of the 70's and 80's. Whilst this isn't that wine, it is still very, very special. A more premium interpretation of that same Deutsch style, the Very Special Riesling is fermented very cool, to mimic the freezing temperatures of winter that Riesling ferments are used to, allowing us to capture the floral aromatics and retain the zesty acidity that is the hallmark of this variety.
