Mistress 2021 TEMPRANILLO

NOSE: Curing leather with plums, black olive and dusty spices.

PALATE: Chalky tannins house an earthy rustic and spice-laden palate, kept alive by a subtle yet dynamic acid that builds length beyond the savoury finish.

PAIR: Cured Jamon, spiced lamb and baked eggplant. Especially that one from Parwana.

Slave to the grapes. That's my unofficial mantra during vintage. Everything is at the mercy of mother nature and you work until the work is done. Long hours, hard work but damn it's fun. The Mistress is a tribute to the workers of vintage, those who sacrifice family, friends and relationships to turn great grapes into fine wine. 

Lazarus NV RIPASSO ROSSO

NOSE: Rustic earth, dried fruit and fresh tobacco.

PALATE: Grippy tannins unwind into a mid-weight palate that is lifted on a dynamic acid line that ends with a chewy, structure driven finish.

PAIR: Meat, pâte and cheeses with all the trimmings on a platter.

CELLAR: Up to 10 years.

The tale of Lazarus is an iconic biblical story, one that details the miracle of Jesus reviving poor Laz after succumbing to the rigours of a deadly disease. With our zombie wine, things are no less iconic; Lazarus is entering its fifth reincarnation, becoming smoother and more finely tuned. Taking a bitzer blend, with a bit o’ this and a bit o’ that, Lazarus sees 16 varieties from across 12 different vintages ripasso’d over Nebbiolo skins to restore, rejuvenate and revitalise these old batches with a new lick of paint. In essence, the classic technique of ripasso is the taking of wine from one grape and passing it over the skins of another to gift complexity to a cuvée. And complex it is, from start to finish, it’s a wild ride that balances old characters with fresh fruits, all bound together by savoury structure.

Siren 2021 NERO D'AVOLA

NOSE: Lavender, cherries, raspberries, dried herbs and dusty earth.

PALATE: The earthier flavours resolve into a dusty structure that carries the finish out beyond the crashing waves of cherries, gamey and black olive notes.

PAIR: Kangaroo steaks or gnocchi with basil tomato passata.

CELLAR: Up to 10 years.

Siren is the most elusive and seductive of our wines. Grown in our lovely seaside region, the wine has a salt-kissed palate melded with beautiful bright cherry aromas and a savoury little twist. The name Nero d'Avola translates into "black of Avola", with Avola being a town on the southeast coast of Sicily. It's a variety that's been forged in the most Mediterranean of climates and retains a bright and punchy natural acidity even in the most arid of environs. Given McLaren Vale’s similarity to the Mediterranean, it’s fitting that Siren is our ode to McLaren Vale’s unique bond between sea and vines.

VERY SPECIAL 2020 CABERNET SAUVIGNON

NOSE: Blackcurrants, dust, spice box.

PALATE: Structured and earthy, there's a plush density to the palate yet slides through easy thanks to the bright acidity.

PAIR: Barbecued lamb or stuffed capsicums.

CELLAR: 15 years

Floating on an iconic tide, like only cabernet can. It breaks in waves, new sensations shimmering off seas and echoing through hilltops. Ancient yet ageless. Polished in the wake of the greats. The ebb and flow we’ve always known. So very special.

TOZZO 2022 sANGIOVESE

NOSE: Strawberries, cherries and cracked pepper.

PALATE: Fresh and zippy, it's got a charged energy that softens towards a mouthwatering finish.

PLATE: Beef carpaccio or burrata with heirloom tomatoes.

CELLAR: Up to 5 Years

Here's Sangiovese, putting its best foot forward. Forget the fiascos, those aptly named wicker cradles for coddling the Chianti's of old, and embrace punch-bowl style drinking with our toZzo Sangiovese.

toZzo - translates roughly to short and squat - which in our speak means "it's in a squat bottle for a short time".

Day drinking ammunition at its finest, pop the cork, splash it around and you'll see what we mean. Best served lightly chilled for maximum effect.

Enigma 2021 Barbera

NOSE: Rhubarb, plums and raspberry frogs drenched in cream.

PALATE: A driving and electric acidity supporting the bold berry flavours. Just a gentle element of structure and spice hidden in the mix too.

PAIR: Pasta amatriciana and Margherita pizza.

CELLAR: Up to 10 years.

An ENIGMA rife with tasteful contradictions. A whodunit as cryptic as nan’s cursive. Like the paradox of a sunny day cast into the seductive myst of mystery. The liquid head-scratcher, chin-stroker, and what-ifer — our beloved ENIGMA. With a palate packing the pull of a bright red button saying, “DO NOT PRESS.” Let’s beat the skin of this conundrum, sit back, and swill until we’re left speaking in riddles.
