There's something special about the way that the southern Italian varieties fit into the viticultural landscape of South Australia. They just work. Their tolerance to the stressful climatic conditions, their unique flavour profiles and the balance between freshness and texture all plays a part in their suitability, and ensures they'll still be here in years to come. I wanted to make our Fiano to express this, walking the knife edge between lively minerality and complexing texture. The nose begins with white flowers, grapefruit that softens with honeyed tones that echoes the winemaking practices: half was fermented in tank for retention of crisp brightness with the other half in old barrels that bring about the more textural elements.
